Buttered Chicken with Oyster Sauce (Rey’s version)
Ingredients:
1 whole chicken cut into big sizes (so it won’t
disintegrate easily)
3 tbsp oyster sauce
2 tbsp soy sauce (for soup color only)
Garlic, chopped
Onion, chopped
1 stalk of spring onion or lemon grass
1 small carrot, cut into half
1 small carrot, cut into half
½ tbsp. peppercorns
3 tbsp butter
Instructions:
1. Put
water in a cooking pot. Add garlic, onion, oyster sauce, soy sauce, chicken, spring
onion, carrots and peppercorns. Bring to a boil, then lower the heat and simmer until
meat is tender.
2. Remove
chicken and set aside to cool down.
3. Season
the chicken broth with salt, then set aside to be served as soup later.
4. Cut
the chicken meat into bite sizes (or flake the chicken if desired)
5. In
a pan, heat the butter. Saute onion and garlic, then add the chicken.
6. Put
the oyster sauce and mix well. Season with salt and pepper. Add chopped green
peppers (optional).
7. Lower
the heat and continue to cook until the meat becomes golden brown.
